A Smokin’ Oak Wood-Fired Pizza & Taproom location will open Sunday in Olathe, just east of the Interstate 35-119th Street interchange.
Lucas Roeske and William Pratt are co-owners of the franchise location at 15241 W. 119th St., according to a release. The 3,000-square-foot restaurant will face 119th and sits in front of the Olathe Station shopping center.
The restaurant prepares its dough and sauces in-house daily and cooks its pizzas “in a high-temperature, oak wood-fired oven in just minutes,” according to the release. The space includes an open kitchen design.
The location also will include a self-pour tap wall offering a mix of 20 domestic and craft beers.
Roeske grew up in a family of restaurant franchise owners, the release says. Pratt, who will lead day-to-day operations, has experience at other fast-casual restaurants. This includes being general manager of a Culver’s that Roeske’s family owns, which is where the two met.
Florida-based Smokin’ Oak Pizza got its start in 2009 and started franchising in 2017. The company has seven open locations, according to its website. The nearest store is in Washington, Missouri, outside St. Louis, with locations also in Omaha, Fayetteville, Florida, Colorado and Georgia.
In addition to Olathe, Smokin’ Oak Pizza has restaurants in the works in Florida, Georgia and Idaho.
